The length of contact between the must and the solid parts of the grape, the temperature, or the timing of the process can significantly alter the final result and determine a wine\u2019s structure and texture. Although it is usually associated primarily with red wines, there are different <strong>types of wine maceration<\/strong> that are also applied to white and ros\u00e9 <strong>wines<\/strong>.  <\/p>\n\n<p class=\"wp-block-paragraph\">But what exactly is maceration? It involves keeping the must in contact with the solid parts of the grape\u2014mainly the <strong>skins<\/strong>\u2014which contain numerous polyphenolic compounds. <\/p>\n\n<h2 class=\"wp-block-heading\"><strong>Skin maceration<\/strong><\/h2>\n\n<p class=\"wp-block-paragraph\"><strong>Skin contact<\/strong> involves keeping the must in contact with the grape skins for a specific period of time to promote the extraction of compounds present in the skins, such as aromas, aromatic precursors, anthocyanins, and tannins. Its intensity and duration depend on the type of wine to be produced. One example is our <strong>Finca Antigua Naturally Sweet Muscat<\/strong>.  <\/p>\n\n<div class=\"wp-block-buttons is-content-justification-center is-layout-flex wp-container-core-buttons-is-layout-fe48e5de wp-block-buttons-is-layout-flex\">\n<div class=\"wp-block-button\"><a class=\"wp-block-button__link wp-element-button\" href=\"https:\/\/familiamartinezbujanda.com\/en\/shop\/wines\/whites-and-sweets\/estate-ancient-moscatel\/\">Naturally Sweet Muscat<\/a><\/div>\n<\/div>\n\n<p class=\"wp-block-paragraph\">Within skin contact maceration, we can distinguish different methods based on the timing and conditions under which contact occurs between the must and the grape skins.<\/p>\n\n<h3 class=\"wp-block-heading\"><strong>Cold pre-fermentation maceration<\/strong><\/h3>\n\n<p class=\"wp-block-paragraph\">In <strong>white wines,<\/strong> maceration is not a mandatory step: in many winemaking processes, the grapes are pressed quickly to separate the must from the solids and limit extraction. During this period, <strong>anthocyanins<\/strong>\u2014which are largely responsible for the color of red wines\u2014are extracted, along with tannins and various aromatic compounds. Techniques such as pumping over or stirring allow the liquid to come into contact again with the so-called \u201ccap\u201d of grape skins that forms on the surface.  <\/p>\n\n<div class=\"wp-block-buttons is-content-justification-center is-layout-flex wp-container-core-buttons-is-layout-fe48e5de wp-block-buttons-is-layout-flex\">\n<div class=\"wp-block-button\"><a class=\"wp-block-button__link wp-element-button\" href=\"[THREAT BLOCKED]                                                   \">Red wines<\/a><\/div>\n<\/div>\n\n<h3 class=\"wp-block-heading\"><strong>Post-fermentation maceration<\/strong><\/h3>\n\n<p class=\"wp-block-paragraph\">Once alcoholic fermentation is complete, the wine can remain in contact with the skins for a longer period of time before devatting and pressing.<\/p>\n\n<p class=\"wp-block-paragraph\">This <strong>extended maceration<\/strong> allows for continued extraction and development of phenolic compounds and can be used to produce wines with greater structure, concentration, and aging potential. This winemaking method produces very distinctive aromas and typically results in wines that are particularly fruity, fresh, and less tannic. <\/p>\n\n<h2 class=\"wp-block-heading\"><strong>The Case of Orange Wines<\/strong><\/h2>\n\n<p class=\"wp-block-paragraph\">Orange wines, such as <a href=\"https:\/\/familiamartinezbujanda.com\/en\/shop\/wines\/orange\/cueva-del-granero-orange-wine\/\"><strong>Finca Antigua\u2019s Cueva del Granero Orange Wine<\/strong><\/a>, are unique among white wines because they remain in prolonged contact with the grape skins.
