For Familia Martínez Bujanda the concept of their project in Rueda was clear from the beginning. The winery includes the latest technology to elaborate their white wines and is exclusively at the service of our technical team[:].

Harvesting at night in Rueda The grapes are harvested by machine in order to reduce the oxidation time of the grapes as much as possible and to ensure that they enter the winery as fresh as possible (harvesting normally begins in mid-September, even with high daytime temperatures), fundamental requirements for the production of quality whites.
The grapes are cold macerated for about 18 hours. Fermentation lasts approximately 19 days at a temperature of 16 degrees Celsius. The wines of Finca Montepedroso are not aged in wood, but a process of aging in oak is essential. nurturing which takes place in stainless steel tanks for at least five months with its lees and with weekly stirring in the case of Finca Montepedroso and 18 months in concrete eggs in the case of Montepedroso Enoteca.
This process, in addition to providing the wine with consistency and personality, is key to compensate for the acidity and rusticity of a grape variety such as Verdejo.
