For the dough:
½ kilo flour
1 sachet of royal yeast
250 grs butter
A pinch of salt
A little milk, to bind.
For the filling:
½ kilo of ricotta cheese
100 grams of sugar
Raisins, to taste
1 teaspoon liquid vanilla, for flavoring
Mix the flour, royal yeast, salt and butter in a bowl and stir with a wooden spoon until everything is well blended. We must keep the dough cold and be careful not to touch it with our hands. Add the egg and a little cold milk, if necessary. The consistency should be soft, but to stretch with a rolling pin. The dough is separated into two parts. Let it rest in the refrigerator while preparing the filling.
For the filling, mix the ricotta with the sugar and then add the egg yolk. Stir well and add the raisins (a small handful).
With a part of the stretched dough, about one centimeter or more thick, line a round mold of about 30cm. previously greased with butter and flour. The filling is poured inside. Cover with the rest of the stretched dough, the same as the previous one, remove the edges, sealing both well, as if it were an empanada, paint the upper surface with a little cold milk and bake.
Turn on the oven a while before, to achieve a medium temperature, 180 to 200 degrees, when the cake is introduced. Bake for 20 minutes to half an hour, until golden brown on top. When it is removed from the oven, it is left to cool in the mold. It can be unmolded on a plate, once cold, and served with a delicious dessert wine.

Very complex in still glass, it has a high aromatic intensity with hints of fruit such as peach and white flowers such as jasmine. It is velvety and silky in the mouth.
