Summer invites you to enjoy relaxed moments and, of course, a lighter, fresher and more flavorful gastronomy. In this selection we propose five recipes that combine perfectly with some of our favorite wines from: Finca Montepedroso, Finca Antigua, Finca Valpiedra and Viña Bujanda. Discover pairings designed to surprise, refresh and enjoy summer evenings.

Burrata salad with grilled peaches and basil

A Verdejo with character: Finca Montepedroso Verdejo.

The freshness, vibrant acidity and herbaceous notes of our Verdejo enhance the soft, sweet flavors of the burrata and peach. A clean, aromatic and harmonious pairing.

Ingredients:

  • Fresh Burrata.
  • Peaches.
  • Arugula.
  • Basil.
  • Extra virgin olive oil.
  • Salt flakes.

Suggestion: lightly grill the peaches to caramelize their natural sugars. Serve cold with a good splash of AOVE and some fresh basil leaves. Enjoy with chilled wine.

Tofu pad thai with peanuts and lime

Our latest addition: Cueva del Granero Orange Wine from Finca Antigua.

The structure and complexity of our first Orange Wine combines perfectly with the intense, salty and citrusy flavors of the pad thai. The wine balances the umami of the tamarind and the fat of the tofu.

Ingredients:

  • Rice noodles.
  • Firm tofu.
  • Soybean sprouts.
  • Chives.
  • Roasted peanuts.
  • Tamarind sauce.
  • Soy sauce.
  • Lima.
  • Sesame oil.

Suggestion: sauté the tofu until golden brown, add the sauce and mix with the noodles. Serve with chopped peanuts, fresh chives and lime wedges. Pair with wine at about 8 °C.

Bluefin tuna tataki with sesame and ponzu

Ideal for sunny days: Viña Bujanda Rosé.

The acidity of the rosé and its red fruit notes balance the intensity and saline touch of the tuna. The result is a fresh, elegant and modern pairing.

Ingredients:

  • Bluefin tuna loin.
  • Sesame seeds.
  • Ponzu sauce.
  • Fresh ginger.
  • Chives.

Suggestion: sear the tuna in a very hot frying pan, dredge it with sesame seeds and cut into thin slices. Serve with ponzu and pickled ginger. Serve with chilled rosé to enhance its fruitiness.

Grilled octopus with truffled potato parmentier

An exclusive white wine for aging: Finca Valpiedra Reserva Blanco.

This aged and structured white wine perfectly complements the intense flavors of the octopus and the unctuous background of the truffled puree. Sophisticated and long on the palate.

Ingredients:

  • Cooked octopus.
  • Potatoes.
  • Liquid cream.
  • Truffle oil.
  • Sweet paprika.
  • Olive oil.

Suggestion: grill the octopus until crispy on the outside. Serve over the creamy parmentier with a touch of truffle and paprika. Ideal with the wine served slightly cool (10-12 °C).

Cold apricot and cheese cake

The sweetest closure: Finca Antigua Moscatel Naturally Sweet.

The natural sweetness and floral aromas of this Muscat harmonize with the acidity of yogurt and stone fruit. A balanced, fresh and delicate finish.

Ingredients:

  • Cream cheese.
  • Greek yogurt.
  • Crushed cookies (for the base).
  • Apricot jam.
  • Fresh apricots.
  • Mint.

Suggestion: prepare the base with cookie and butter. Mix yogurt and cheese for the filling and let cool. Top with jam and fresh fruit. Serve chilled with a glass of muscatel.
