Finca Antigua Moscatel Naturally Sweet Muscatel & Foie micuit with citrus reduction

The plate

This starter is a delicate preparation in which the duck liver is gently cooked to achieve a buttery texture. It is accompanied here with a reduction of orange and mandarin, plus a few flakes of salt to enhance the contrast.

Why pair with Finca Antigua Moscatel

The natural sweetness and floral notes of the Muscat balance the foie, creating a round and silky sensation.

The citric reduction, on the other hand, contributes acidity and freshness, preventing the pairing from being cloying and enhancing the honey and white flower aromas of the wine.

Finca Montepedroso Verdejo & Sea bass ceviche

The plate

Ceviche de corvina is a fresh and citric preparation typical of Peruvian cuisine. The corvina, with firm flesh and delicate flavor, is prepared with a leche de tigre made with lime, cilantro, red onion and a touch of aji amarillo. The result is a vibrant, aromatic and clean bite.

Why pair with Montepedroso Verdejo Estate

This Verdejo, with herbaceous, citrus notes and marked acidity, finds its ideal partner in ceviche. The lime intensifies its freshness, the coriander highlights its vegetal nuances and the light texture of the fish prevents the wine from losing prominence.

Cueva del Granero Orange Wine & Grilled Octopus with Paprika

The plate

Grilled octopus offers a perfect blend of tender texture and smoky aromas. After cooking, it is grilled to obtain that characteristic crispy golden brown. It is sprinkled with paprika de la Vera, olive oil and coarse salt.

Why pair with an Orange Wine

Cueva del Granero, which macerates with its skins that give it its characteristic color, has aromas of ripe fruit and slightly spicy notes.

The smoky flavor of the octopus harmonizes with the complexity of the wine, while the paprika enhances its spicy profile. In addition, the firm texture of the octopus perfectly matches the body of the Orange Wine.

Finca Valpiedra Reserva & veal cheeks with red wine

The plate

Braised veal cheeks are a classic of traditional cuisine. After several hours of cooking, the meat is tender and falls apart when pressed with a fork. It is cooked in a concentrated sauce of vegetables, broth and red wine, with hints of bay leaf, pepper and caramelized carrot.
